The privilege of traveling to the South of France was an opportunity of a lifetime. To experience a completely different and amazingly beautiful part of the world was life changing. From the spectacular market in Nice to the quaint restaurants in Villefranche Sur Mer, inspiration was rampant. This trip took Roadchef to a new level.
Shallots, Thyme, Artichokes, Mushrooms, Truffles... these are some of my favorite things that I use frequently in many of my signature dishes. I was unaware that these are very prominent in French cooking before I traveled to the South of France. I had a little French in me and I didn't even realise it. There was one quaint and amazing restaurant in particular in Villefranche Sur Mer that gave me new inspiration that I brought back and used for the upcoming Christmas Eve feast. I'm grateful for this experience and the value it brought to Roadchef.
